American oak imparts creamy vanilla, caramel, and spice; highest char yields more smoke and toast

French Oak   

Offers a more subtle, refined influence with notes of dried fruit, mild spice, and soft tannins. Ideal for enhancing elegance and complexity in lighter Scotch blends. Often used in wine barrels, French oak can add depth without overpowering the spirit.

 

Barrel Prep & Maintenance

Hydration & Leaks 

Soak your barrel with warm water to seal staves. Keep it moist to prevent shrinkage and ensure a tight fit

Storage Environment 

Maintain a cool, humid spot (15–20°C with moderate humidity) to minimise evaporation and wood shrinkage

Filling & Monitoring

Proof & Fill Level

60–65% ABV allows optimal extraction. Fill to about 90% to reduce headspace oxidation.

Cue the Clock

Small barrels mature faster—taste at 4–6 weeks. Larger 50–100 L barrels may need months to years

Taste, Rotate, & Finish

Store Smart  

Place barrels off the ground and rotate occasionally for even exposure and development .

Tasting Schedule 

Begin tasting at 4 weeks, then every 2 weeks. Pull when you reach your ideal flavour—don’t over-age (risking bell pepper or tannin overload) .

Experiment with Finishes

Try finishing in sherry, port, or even mizunara oak chips/casks for unique aromatic twists

After the First Use Reuse for Fun 

Extend barrel’s life by aging a second or third batch. You can also barrel-age cocktails, hot sauce, coffee, or vinegar for gourmet flair

Clean & Store 

Rinse, refill with water, and keep sealed. When fully drained, store in cool, humid conditions to preserve integrity.
